Description

A one-to-one simple syrup made with turbinado (raw) sugar, yielding a syrup with light molasses/caramel notes and a slightly darker color than white-sugar simple syrup. Use in cocktails, coffee drinks, and culinary applications where a richer sugar flavor is desired.

History

Turbinado sugar is a minimally refined cane sugar produced by centrifuging raw cane juice; syrups made from it have been used in drinks and baking where a more complex, slightly molasses-like flavor is wanted.

Instructions

Step 1.
1) Measure: Use equal parts by volume (1:1) turbinado sugar to water. Typical batch: 1 cup (200 g) turbinado sugar and 1 cup (240 ml) water.
Step 2.
2) Combine: Place the water in a small saucepan and add the turbinado sugar.
Step 3.
3) Heat: Warm over medium heat, stirring frequently to help the coarse crystals dissolve. Heat just until the sugar is fully dissolved and the syrup is clear; do not boil vigorously. This usually takes 3–5 minutes.
Step 4.
4) Optional flavoring: If desired, add flavorings (e.g., a split vanilla bean, citrus peel, or a cinnamon stick) after the sugar dissolves and simmer gently for 2–3 minutes, then remove.
Step 5.
5) Cool: Remove the pan from heat and let the syrup cool to room temperature.
Step 6.
6) Strain: If you added solids or if any undissolved particles remain, strain the syrup through a fine mesh sieve or cheesecloth into a clean container.
Step 7.
7) Bottle: Transfer the cooled syrup to a sterilized glass bottle or jar with a tight-fitting lid.
Step 8.
8) Label & refrigerate: Label with the date and store in the refrigerator. Shake before use if crystals form.
Step 9.
9) Optional longer-life method: For longer shelf life, substitute a small portion (up to 1–2 tablespoons per cup) of the water with vodka and mix; this can help inhibit spoilage.

Storage

Keep refrigerated in a sterilized, airtight container. Best used within 30 days. Watch for cloudiness, fermentation, or mold—discard if present. Adding a small splash of neutral spirit (vodka) can extend shelf life.
