Description

Freshly squeezed lime juice for cocktails and culinary use. Bright, acidic, and aromatic—more vibrant than bottled juice when freshly prepared. Straining removes pulp and seeds for a smooth bar-quality product.

History

Citrus juices have been used for centuries for flavor and preservation; lime juice became notable in naval history for preventing scurvy and later as a key ingredient in classic cocktails (e.g., gimlet, daiquiri) and culinary preparations.

Instructions

Step 1.
1) Select limes that are heavy for their size with smooth skin (these have more juice). 2) Bring limes to room temperature or microwave whole for 10–15 seconds to soften slightly. 3) Roll each lime firmly on the countertop under your palm to break membranes and increase yield. 4) Cut each lime in half crosswise. 5) Juice using a handheld reamer, citrus press, or electric juicer. 6) Pour collected juice through a fine-mesh strainer into a measuring cup or bowl to remove seeds and excess pulp; press solids gently with a spoon to extract more juice if desired. 7) Measure and use immediately in cocktails. 8) For storage: transfer juice to a clean, airtight glass or stainless container, leaving minimal headspace; chill immediately in the refrigerator.

Storage

Refrigerate in an airtight, nonreactive container (glass or stainless) at ≤4°C and use within 48–72 hours for best flavor. For longer storage, freeze in ice-cube trays (store cubes in a sealed freezer bag) for up to 6 months. Avoid metal containers that can react with acid. Optionally add 1–2 teaspoons of neutral spirit (per cup) to extend refrigerated stability, but this alters flavor.
