History

Citrus-flavored sugars have long been used in pastry and beverage service to add aromatic brightness and an attractive rim to cocktails. Bartenders and bakers have adapted simple sugar-and-zest techniques to create a range of flavored finishing sugars.

Instructions

Step 1.
1) Ingredients: 1 cup (200–240 g) granulated sugar (or superfine sugar), zest of 1–2 citrus fruits (e.g., 1 lemon + 1 lime, or 1 orange). Optional: extra citrus peel for stronger flavor.
Step 2.
2) Zest: Use a microplane or fine grater to remove only the colored outer peel (avoid white pith).
Step 3.
3) Combine: Put sugar and zest in a bowl. Use clean fingertips to rub the zest into the sugar for 1–2 minutes to release oils. Alternatively, pulse 6–10 times in a food processor to evenly distribute oils.
Step 4.
4) Drying (important to prevent clumping/mold): Spread the sugared zest in a thin layer on a baking sheet. Air-dry at room temperature for 1–3 hours, stirring occasionally, until no visible wet clumps remain. For faster drying, place in a preheated oven at the lowest setting (around 175–200°F / 80–95°C) for 3–6 minutes, watching closely so it doesn’t toast — let cool completely.
Step 5.
5) Break up any clumps with a fork or pulse once in the processor if needed.

6) Store: Transfer to an airtight jar. Label with date and citrus used. Use for rimming glasses, garnishing cocktails or desserts.
Step 7.
Notes: If you used a lot of fresh zest or notice residual moisture after drying, store refrigerated and use sooner. For a finer texture for cocktail rimming, use superfine sugar.

Storage

Store in an airtight container in a cool, dry place away from direct sunlight. If any residual moisture remains or you live in a warm/humid climate, refrigerate and use within 2–4 weeks. Shake or break up before use if clumped.
