Description

Finely aromatic granulated sugar infused with vanilla seeds and pod. Used to sweeten and flavor cocktails, rims, baked goods, coffee and cocktails without adding liquid.

History

Vanilla sugar has long been used in European baking where whole vanilla was expensive; home cooks would infuse sugar with vanilla to capture and preserve the flavor for use in pastries and beverages.

Instructions

Step 1.
1. Sterilize and fully dry a 16–32 oz (500–1000 ml) glass jar with an airtight lid.
Step 2.
2. Measure 1 cup (≈200 g) granulated sugar and pour it into the jar. Caster sugar works well for faster infusion; powdered sugar will clump and is not recommended.
Step 3.
3. Split 1 fresh vanilla bean lengthwise with a sharp knife and scrape out the seeds. Add both the seeds and the scraped pod to the sugar.
Step 4.
4. Stir or shake the jar gently to distribute the seeds through the sugar.
Step 5.
5. Seal the jar tightly and store in a cool, dark place. Shake the jar once or twice in the first week to redistribute the seeds.
Step 6.
6. Flavor will be noticeable after 3–5 days and reach good intensity after 1–2 weeks. For a stronger vanilla note, leave for up to 4 weeks or use 2 beans per cup of sugar.
Step 7.
7. Use the sugar as-is (seeds included) or sift if you prefer no visible specks. Replenish sugar as you use it and keep the pod(s) in the jar to maintain aroma; replace the pod(s) after several months if aroma fades.

Storage

Keep in an airtight container in a cool, dark, dry place. Avoid moisture (do not refrigerate) as this causes clumping and spoilage. Leave the vanilla pod in the jar to continue to flavor the sugar; refresh by adding more sugar or a fresh pod when aroma diminishes.
