History

Vanilla originates from Mesoamerica, where it was used by the Totonac and Aztec peoples. Vanilla-flavored syrups have been used in beverages and desserts since the rise of modern bartending and café culture to add concentrated, soluble vanilla flavor.

Instructions

Step 1.
1) Ingredients: 1 cup (240 ml) water, 1 cup (200 g) granulated sugar, 1 vanilla bean (or 1 tbsp pure vanilla extract as a shortcut).
Step 2.
2) Split the vanilla bean lengthwise and scrape the seeds with the back of a knife. Place the bean pod and seeds in a small saucepan with the water.
Step 3.
3) Add the sugar to the saucepan and stir to combine.
Step 4.
4) Heat over medium, stirring occasionally, until the sugar fully dissolves and the mixture just reaches a simmer. Do not boil vigorously; simmer 1–2 minutes to meld flavors.
Step 5.
5) Remove from heat and let steep with the vanilla pod in the syrup as it cools for at least 30 minutes (up to several hours for a stronger flavor).
Step 6.
6) Remove and discard the pod (or leave it in the bottle for ongoing infusion), or strain the syrup through a fine mesh to remove any solids.
Step 7.
7) Transfer the cooled syrup to a clean, airtight bottle or jar and refrigerate.
Step 8.
8) Optional: To extend shelf life, add 1 tablespoon (15 ml) of neutral spirit (vodka) per cup of syrup before bottling.

Storage

Store refrigerated in a clean, airtight bottle or jar. Use within ~30 days. If you add 1 tbsp (15 ml) vodka per cup of syrup, shelf life can be extended (keeps several months refrigerated). Discard if cloudy, foamy, or off-smelling.
