<p>In the plain of Puglia, in the center of the Salento peninsula, halfway between the Ionian and the Adriatic, the territory of Copertino extends. In this red earth the vine and the olive tree alternate harmoniously, the olive tree with secular trees with large twisted trunks and the vine with the characteristic sapling breeding, which produces strong and generous wine. In 1935 thirty-six winemakers founded the social winery of Copertino, with the aim of enhancing cooperation and directly dealing with the vinification of their grapes and the trade in wines. Today there are 300 proud members who bring their crops. The area planted with vines is about 300 hectares and the vineyards are treated with wisdom, the result of tradition and innovation, obtaining excellent wines, capable of inspiring. Cupertinum mainly processes traditional vines: Negroamaro, the wine symbol of Salento, is the main one, flanked by black Malvasia, Primitivo, white Malvasia and other varieties acclimatized in these lands. The DOC Copertino territory has clayey lands of various composition placed above the hard or tufaceous limestone in a flat area: from 30 to 60 meters above sea level. In the cellar, during winemaking and aging, the goal is to highlight the character of the wine.
