The palate is full-bodied with a rounded, textural palate and ultra-refined tannins that lead to a silky, savory, black-fruited finish. 51% cabernet sauvignon and 49% shiraz. Excellent. Higher notes reveal custard tart and brule, couting meating pan-scrapings and juices. Yet beneath, a darker edge - black pudding, sweetbread, asphalt. Morever, not just an "offal" offering - an aromatic veil of satsuma plum, fig and quince paste aromatics liberally sprinkled above. A tasted continuum of assorted flavors and textures. A spoil of fruits meshed with a grain-like paste. At once chewy and succulent, heightened by a mouth-watering acidity and overt elongated tannins.
