Step 1.
- Chill a coupe glass by filling it with ice water.
Step 2.
- In a shaker, combine 2 oz of absinthe, 1 oz of fresh lemon juice, and 0.5 oz of honey syrup.
Step 3.
- Fill the shaker with ice and shake well until chilled.
Step 4.
- Empty the ice water from the coupe glass and strain the mixture into the glass.
Step 5.
- Garnish with a twist of lemon peel.
