A unique twist on the classic Clover Club cocktail, featuring Baijiu for an aromatic and complex flavor profile.

Instructions

- Chill a coupe glass by filling it with ice water.
- In a shaker, combine 2 oz of Baijiu, 1 oz of freshly squeezed lemon juice, 1/2 oz of raspberry syrup, and 1 oz of egg white.
- Dry shake (without ice) for about 15 seconds to emulsify the egg white.
- Add ice to the shaker and shake vigorously for 15 seconds until well chilled.
- Empty the ice water from the chilled coupe glass.
- Strain the mixture into the glass using a fine mesh strainer to ensure a smooth texture.
- Garnish with a fresh raspberry and a mint leaf.
