This cocktail is a modern interpretation of the traditional Paloma, blending the unique characteristics of Baijiu with citrus for a refreshing experience.

Instructions

Step 1.
- Rim a highball glass with salt by running a lime wedge around the rim and dipping it into coarse salt.
Step 2.
- In a shaker, combine 2 ounces of Baijiu, 1 ounce of fresh lime juice, and 1/2 ounce of agave syrup.
Step 3.
- Fill the shaker with ice and shake well for about 15 seconds.
Step 4.
- Strain the mixture into the prepared highball glass filled with ice.
Step 5.
- Top off with 3 ounces of grapefruit soda.
Step 6.
- Garnish with a lime wedge on the rim.
