A unique twist on the classic Sazerac cocktail, using Baijiu as the base spirit, offering a blend of herbal and anise flavors.

History

The Sazerac is a New Orleans classic, traditionally made with rye whiskey, but this rendition introduces Baijiu, a strong Chinese spirit, to create a fusion of cultures.

Instructions

Step 1.
- Chill an Old Fashioned glass by filling it with ice water.
Step 2.
- In another glass, combine 2 ounces of Baijiu and a sugar cube, and muddle until the sugar dissolves.
Step 3.
- Add a few dashes of Peychaud's bitters and stir well with ice.
Step 4.
- Discard the ice water from the chilled glass.
Step 5.
- Rinse the inside of the glass with absinthe, discarding any excess.
Step 6.
- Strain the Baijiu mixture into the prepared glass.
Step 7.
- Express the oils from a lemon peel over the drink, then drop the peel into the glass.

Ingredients

2 ounces Baijiu
1 Sugar cube
3 dashes Peychaud's Bitters
0.5 ounces Absinthe — for rinsing
1 Lemon Peel (garnish)
