Step 1.
- Chill a coupé glass by filling it with ice water.
Step 2.
- In a shaker, add 2 oz of Baijiu.
Step 3.
- Squeeze in the juice of half a fresh Yuzu (about 1 oz).
Step 4.
- Add 0.5 oz of simple syrup to balance the flavors.
Step 5.
- Fill the shaker with ice and shake vigorously for about 15 seconds.
Step 6.
- Empty the ice water from the coupé glass and strain the mixture into the glass.
Step 7.
- Garnish with a twist of Yuzu peel.
