History
The Bellini originated in Venice, Italy, in the 1940s, created by a famous bartender who sought a light and fruity drink to celebrate the essence of summer.
Instructions
Step 1.
- Puree the fresh peaches in a blender until smooth.
Step 2.
- Strain the peach puree through a fine mesh sieve to remove any solids.
Step 3.
- In a chilled champagne flute, add 2 ounces of the peach puree.
Step 4.
- Carefully top with 4 ounces of chilled Prosecco or sparkling wine.
Step 5.
- Gently stir to combine and garnish with a slice of peach.
