The Bellini originated in Venice, Italy, during the 1940s. It was created by a bartender who wanted to capture the beauty of a sunset using ripe peaches and sparkling wine.

Instructions

Step 1.
- Puree ripe peaches until smooth.
Step 2.
- Strain the peach puree to remove any pulp, if desired.
Step 3.
- In a champagne flute, add about 1 ounce of peach puree.
Step 4.
- Slowly top with chilled Prosecco, pouring gently to maintain the bubbles.
Step 5.
- Garnish with a slice of fresh peach before serving.
