Step 1.
- Fill a shaker with ice.

- Add bourbon, lemon juice, simple syrup, and egg white to the shaker.
Step 3.
- Shake vigorously for 15 seconds to emulsify the egg white.
Step 4.
- Strain into a chilled coupe glass.
Step 5.
- Grate fresh nutmeg on top as garnish.
