Step 1.
- Muddle a few slices of fresh seasonal fruit (like berries or citrus) in the bottom of a Collins glass.
Step 2.
- Add a splash of simple syrup to the muddled fruit and mix gently.
Step 3.
- Fill the glass with ice cubes to the top.
Step 4.
- Slowly pour chilled champagne over the ice and fruit mixture until the glass is full.
Step 5.
- Gently stir to combine the ingredients.
Step 6.
- Garnish with additional fresh fruit and a sprig of mint.
