History

The Sazerac originated in New Orleans in the 19th century, traditionally made with rye whiskey. This variation with cognac pays homage to the cocktail's evolution while highlighting the rich flavors of the spirit.

Instructions

Step 1.
- Rinse an Old Fashioned glass with absinthe and discard the excess.
Step 2.
- In another glass, muddle a sugar cube with a few dashes of Peychaud’s bitters until dissolved.
Step 3.
- Add ice to the glass and pour in the cognac.
Step 4.
- Stir well to chill and combine the ingredients.
Step 5.
- Strain the mixture into the prepared glass.
Step 6.
- Express the oils from a lemon twist over the drink and drop it in as a garnish.
