Step 1.
- In a blender, puree 1 cup of diced watermelon until smooth.
Step 2.
- Strain the watermelon puree through a fine mesh sieve into a bowl to remove the pulp.
Step 3.
- In a highball glass, fill it halfway with ice cubes.
Step 4.
- Pour 1.5 oz of elderflower liqueur over the ice.
Step 5.
- Add 2 oz of fresh watermelon juice to the glass.
Step 6.
- Top off with 3 oz of sparkling water.
Step 7.
- Gently stir to combine all ingredients.
Step 8.
- Garnish with a slice of watermelon and a sprig of mint.
