Instructions
- Chill a champagne flute by filling it with ice water.
- In a shaker, combine 1 oz of cognac, 1/2 oz of fresh lemon juice, and 1/2 oz of simple syrup.
- Fill the shaker with ice and shake vigorously for about 15 seconds.
- Empty the ice water from the chilled flute.
- Strain the mixture into the champagne flute.
- Top with 3 oz of chilled champagne or sparkling wine.
- Garnish with a twist of lemon peel. Serve immediately.
