Step 1.
- In a shaker, combine 2 oz of gin and 1 oz of freshly squeezed lemon juice.
Step 2.
- Add 1 oz of lavender simple syrup (made by boiling equal parts sugar and water with lavender until dissolved, then straining).
Step 3.
- Fill the shaker with ice and shake well for about 15 seconds.
Step 4.
- Strain the mixture into a highball glass filled with ice.
Step 5.
- Top with 2 oz of soda water and gently stir.
Step 6.
- Garnish with a sprig of lavender and a twist of lemon.
