Step 1.
- Chill a highball glass by placing it in the freezer or filling it with ice water.
Step 2.
- In a shaker, combine 2 oz of gin, 1 oz of fresh lemon juice, 1 oz of peach puree, and 1/2 oz of simple syrup.
Step 3.
- Fill the shaker with ice and shake vigorously for about 15 seconds.
Step 4.
- Strain the mixture into the chilled highball glass filled with ice.
Step 5.
- Top with 2 oz of soda water to add fizz.
Step 6.
- Garnish with a slice of fresh peach.
