Instructions
- Muddle the fresh mint leaves and lime wedges in a cocktail shaker to release the mint's essential oils.
- Add the gin and lychee syrup to the shaker with ice.
- Shake well until chilled and combined.
- Strain the mixture into a double old fashioned glass filled with crushed ice.
- Top with soda water for a slight fizz and stir gently.
- Garnish with a sprig of fresh mint.
