Step 1.
- Chill a coupe glass by placing it in the freezer or filling it with ice water.
Step 2.
- In a shaker, add 2 oz of mezcal, 1 oz of simple syrup, and one whole egg.
Step 3.
- Dry shake the ingredients (without ice) for about 15 seconds to emulsify the egg.
Step 4.
- Add ice to the shaker and shake again for another 15 seconds until well chilled.
Step 5.
- Strain the mixture into the chilled coupe glass.
Step 6.
- Garnish with grated nutmeg on top.
