Instructions

Step 1.
- Chill an Old Fashioned glass by filling it with ice water.
Step 2.
- In a separate mixing glass, combine mezcal, simple syrup, and bitters.
Step 3.
- Stir the mixture with ice until well chilled.
Step 4.
- Empty the chilled glass of ice water and rinse it with absinthe, discarding the excess.
Step 5.
- Strain the chilled mixture into the prepared glass.
Step 6.
