Instructions
- In a cocktail shaker, muddle the fresh peach slices with mint leaves to release their juices and oils.
- Add bourbon, simple syrup, and ice to the shaker.
- Shake well until the mixture is chilled.
- Strain the mixture into a highball glass filled with ice.
- Top with soda water to add a little fizz.
- Garnish with peach slices and a sprig of mint.
