History

The Bellini originated in Venice, Italy, in the 1940s, traditionally made with fresh peach puree. The Pear Bellini adapts this classic by replacing peaches with pears for a unique flavor profile.

Instructions

Step 1.
- Puree fresh ripe pears in a blender until smooth.
Step 2.
- Strain the pear puree through a fine mesh sieve to remove any pulp.
Step 3.
- In a chilled champagne flute, add 2 ounces of pear puree.
Step 4.
- Top off with 4 ounces of chilled Prosecco or sparkling wine.
Step 5.
- Gently stir to combine.
Step 6.
- Garnish with a thin slice of pear on the rim.
