Step 1.
- Chill a coupe glass.
Step 2.
- In a shaker, combine 2 oz of Pisco, 1 oz of simple syrup, 1 oz of fresh egg white, and a dash of Angostura bitters.
Step 3.
- Dry shake the mixture without ice to emulsify the egg white.
Step 4.
- Add ice and shake again until well chilled.
Step 5.
- Strain the mixture into the chilled coupe glass.
Step 6.
- Garnish with grated nutmeg.
