Instructions
- Chill a champagne flute.
- In a shaker, combine 2 ounces of Pisco, 1 ounce of fresh lemon juice, and 1 ounce of simple syrup.
- Add ice and shake well until chilled.
- Strain the mixture into the chilled champagne flute.
- Top with 3 ounces of sparkling wine or champagne.
- Garnish with a twist of lemon peel.
