History

The Pisco Sour originated in Peru in the early 20th century and is considered the national cocktail. It reflects the country’s longstanding tradition of pisco distillation and its use of fresh local ingredients.

Instructions

Step 1.
- In a cocktail shaker, combine 2 oz of pisco, 1 oz of fresh lime juice, 3/4 oz of simple syrup, and 1 egg white.
Step 2.
- Dry shake (without ice) vigorously for about 10 seconds to create froth.
Step 3.
- Add ice to the shaker and shake again for another 10-15 seconds.
Step 4.
- Strain the mixture into a chilled cocktail glass.
Step 5.
- Dash a few drops of Angostura bitters on top for garnish. Optionally, add a lime wheel. Be careful not to disturb the foam while adding the garnish.
