Step 1.
- In a shaker, combine 2 oz of pisco, 1 oz of fresh lime juice, 1 oz of mango puree, and 1 oz of simple syrup.
Step 2.
- Add one egg white to the shaker for frothiness.
Step 3.
- Dry shake (without ice) to emulsify the egg white.
Step 4.
- Add ice to the shaker and shake vigorously for about 15 seconds.
Step 5.
- Strain into a chilled coupe glass.
Step 6.
- Garnish with a slice of fresh mango.
