Step 1.
- In a cocktail shaker, combine 2 oz of ruby port, 1 oz of simple syrup, and 1 whole egg.
Step 2.
- Shake vigorously without ice to emulsify the egg.
Step 3.
- Add ice to the shaker and shake again until chilled.
Step 4.
- Strain the mixture into a chilled coupe glass.
Step 5.
- Garnish with freshly grated nutmeg.
