Instructions
- Fill a shaker with ice.
- Add 2 oz of dark rum and 1 oz of pineapple juice to the shaker.
- Pour in 0.5 oz of lime juice and 0.5 oz of simple syrup.
- Shake well until chilled.
- Strain the mixture into a highball glass filled with ice.
- Top with 2 oz of ginger beer.
- Garnish with a slice of lime and a sprig of mint.
