Instructions
- Muddle fresh mint leaves and simple syrup in a julep cup until the mint is fragrant.
- Fill the cup with crushed ice, packing it tightly.
- Pour over the Islay Scotch, filling the cup to the brim.
- Stir gently to combine the flavors, taking care not to lose the ice.
- Top with more crushed ice to create a dome shape.
- Garnish with a fresh mint sprig on top.
