Instructions
Step 1.
- Fill a highball glass with crushed ice.
Step 2.
- Pour the sherry over the ice.
Step 3.
- Add the fresh lime juice and simple syrup.
Step 4.
- Swizzle using a swizzle stick or a bar spoon until well mixed and chilled.
Step 5.
- Top with soda water and stir gently.
Step 6.
- Garnish with a sprig of fresh mint.
