The Bellini originated in Venice in the 1940s, traditionally made with white peaches and Prosecco. The strawberry variation offers a delightful twist, embracing seasonal flavors.

Instructions

Step 1.
- Puree fresh strawberries in a blender until smooth.
Step 2.
- Strain the strawberry puree through a fine sieve to remove seeds.
Step 3.
- In a chilled Champagne flute, pour 2 ounces of the strawberry puree.
Step 4.
- Top with 4 ounces of chilled Prosecco. Stir gently to combine.
Step 5.
- Garnish with a fresh strawberry on the rim.
