Step 1.
- Chill a coupe glass by filling it with ice water and setting it aside.
Step 2.
- In a cocktail shaker, combine the wine, lemon juice, simple syrup, and egg white.
Step 3.
- Dry shake the mixture (without ice) for about 15 seconds to emulsify the egg white.
Step 4.
- Add ice to the shaker and shake again for another 15 seconds until well chilled.
Step 5.
- Discard the ice water from the coupe glass and strain the cocktail mixture into the glass.
Step 6.
- Garnish with a lemon twist.
