History

Instructions

Step 1.
Ingredients:
- 1 cup (240 ml) water
- 1 cup (200 g) granulated sugar
- 3–4 whole cinnamon sticks (about 2–3 inches each)
Step 2.
Steps:
1. Combine water and sugar in a small saucepan and stir to moisten the sugar.
2. Add the cinnamon sticks to the pan.
3. Heat over medium, bringing the mixture just to a simmer. Stir until the sugar is fully dissolved (do not boil vigorously).
4. Once dissolved, reduce heat to low and let simmer gently for 8–12 minutes to extract cinnamon flavor.
5. Remove the pan from heat and allow the syrup to steep with the cinnamon sticks for an additional 20–30 minutes for stronger flavor.
6. Remove and discard the cinnamon sticks, then strain the syrup through a fine mesh strainer or cheesecloth into a clean heatproof container to remove any small particles.
7. Let the syrup cool to room temperature, then transfer to a sanitized bottle or jar, seal tightly, label with date, and refrigerate.
Step 3.
Optional variations:
- For a deeper, spicier flavor, toast the cinnamon sticks briefly in a dry pan before adding.
- For a thicker, longer-lasting syrup, use a 2:1 ratio (2 cups sugar to 1 cup water) and follow the same method.
- If using ground cinnamon, steep and then filter very carefully (note: ground cinnamon often leaves sediment and can muddle clarity).

Storage

Store refrigerated in an airtight glass bottle or jar. Label with preparation date. Discard if cloudy, foamy, or if off smells develop. For longer shelf life, use a 2:1 sugar:water ratio and ensure containers are well sanitized.
