Description

Fresh Sour Mix is a balanced mixer made from freshly squeezed lemon and lime juices sweetened with simple syrup. It provides bright citrus acidity and controlled sweetness for cocktails like margaritas, whiskey sours, daiquiris and many other shaken drinks. Using fresh juice yields a cleaner, brighter flavor than pre-made commercial mixes.

History

Sour mixes evolved as a convenient way to balance sweet and sour elements in cocktails; home and bar versions date from the 20th century. Fresh homemade sour mix restores the bright citrus character lost in many bottled mixes.

Instructions

Step 1.
1. Make simple syrup: combine 1 cup (200 g) granulated sugar and 1 cup (240 ml) water in a small saucepan. Warm over medium heat, stirring until the sugar fully dissolves. Do not boil. Remove from heat and let cool to room temperature. (For a slightly thicker syrup, use 2:1 sugar to water.)
2. Juice the citrus: roll and press about 6–8 medium lemons and 6–8 medium limes to yield 1 cup (240 ml) fresh lemon juice and 1 cup (240 ml) fresh lime juice. Strain the juices through a fine mesh sieve to remove pulp and seeds.
3. Combine: in a clean container or bottle, combine the 1 cup lemon juice, 1 cup lime juice, and 1 cup cooled simple syrup. Stir or shake well to homogenize.
4. Taste and adjust: if the mix is too tart, add up to 2 tablespoons more syrup; if too sweet, add a tablespoon or two of lemon or lime juice. Chill before use.
5. Store: transfer to an airtight bottle or jar, refrigerate immediately, and label with the prep date. Shake or stir before using because separation can occur.
6. Optional long-term storage: freeze in ice cube trays, then transfer cubes to a freezer bag for up to 3 months. Thaw cubes in refrigerator before use.

Recipe yields approximately 3 cups total. Use within recommended shelf life.

Storage

Keep refrigerated in an airtight container at 40°F (4°C) or below. Shake or stir before each use. Use within 5 days for best flavor. For longer storage, freeze in ice cube trays and transfer cubes to a sealed freezer bag (use within 3 months). Do not leave at room temperature for extended periods.
