History

Honey has been used as a sweetener and in drinks for millennia (e.g., mead). Honey syrup is a modern bartending adaptation that makes honey easy to mix into cold drinks.

Instructions

Step 1.
1. Measure equal parts honey and warm water by volume (common ratio 1:1). Example: 1 cup honey + 1 cup warm water. 2. Warm the water slightly (not boiling) — about 40–60°C (100–140°F) — to loosen the honey. 3. Pour the warm water into a heatproof container, add the honey. 4. Stir vigorously until the honey is fully dissolved and the mixture is uniform. 5. Let the syrup cool to room temperature. 6. Transfer to a clean, airtight bottle or jar (preferably sterilized). Label with preparation date. 7. Store refrigerated and shake before each use. Optional: For a thicker, more viscous syrup, use 2 parts honey to 1 part water (2:1). For flavored syrups, add spices or citrus peel during warming, then strain out solids before bottling.

Storage

Keep refrigerated in an airtight, sterilized bottle or jar. Shake before use. Discard if you detect off smells, fermentation (bubbling), or visible mold.
