Step 1.
- Chill a coupette glass by filling it with ice water and setting it aside.

- In a separate mixing glass, combine 1.5 oz of absinthe with 0.5 oz of simple syrup and a dash of aromatic bitters.
Step 3.
- Stir gently with ice for about 20 seconds to chill and dilute slightly.
Step 4.
- Discard the ice water from the chilled coupette and strain the mixture into the glass.
Step 5.
- Using an absinthe spoon, place a sugar cube on the spoon over the glass and slowly drip cold water onto the sugar cube, allowing it to dissolve into the cocktail.
Step 6.
- Garnish with a sprig of fresh mint and serve immediately.
