Step 1.
- Chill a coupé glass by filling it with ice water and setting aside.
Step 2.
- In a shaker, combine 1.5 oz of absinthe with 0.5 oz of fresh lemon juice and 0.5 oz of simple syrup.
Step 3.
- Fill the shaker with ice and shake well until chilled.
Step 4.
- Empty the ice water from the coupé glass and strain the cocktail mixture into it.
Step 5.
- Carefully layer 0.5 oz of overproof rum on top of the drink by pouring it slowly over the back of a spoon.
Step 6.
- Just before serving, ignite the overproof rum to create a green flame on top of the cocktail.
Step 7.
- Allow guests to blow out the flame before drinking to enjoy the full flavor.
