Step 1.
- Chill a coupe glass by placing it in the freezer or filling it with ice water.
Step 2.
- In a shaker, combine 2 oz of absinthe, 1 oz of fresh lemon juice, and 0.5 oz of simple syrup.
Step 3.
- Add a handful of mint leaves to the shaker.
Step 4.
- Fill the shaker with ice and shake vigorously for about 15-20 seconds.
Step 5.
- Double strain the mixture into the chilled coupe glass to remove mint pieces.
Step 6.
- Garnish with a sprig of fresh mint.
