Step 1.
- Chill a champagne flute by placing it in the freezer or filling it with ice water for a few minutes.
Step 2.
- In a mixing glass, add 1 ounce of absinthe and fill with ice.
Step 3.
- Stir well until the mixture is cold, about 20 seconds.
Step 4.
- Strain the absinthe mixture into the chilled champagne flute.
Step 5.
- Top with 3 ounces of sparkling wine or champagne.
Step 6.
- Gently stir to combine.
Step 7.
- Garnish with a twist of lemon peel.
