Step 1.
- Chill a coupe glass by placing it in the freezer or filling it with ice water.
Step 2.
- In a cocktail shaker, add 2 oz of absinthe, 3/4 oz of honey syrup, and 3/4 oz of fresh lemon juice.
Step 3.
- Fill the shaker with ice and shake vigorously for about 15 seconds.
Step 4.
- Strain the mixture into the chilled coupe glass.
Step 5.
- Garnish with a twist of lemon peel.
