Step 1.
- Chill your coupe glass by filling it with ice water.
Step 2.
- In a cocktail shaker, add 1.5 oz of absinthe.
Step 3.
- Pour in 1 oz of Madeira wine.
Step 4.
- Crack an egg and separate the yolk; add the yolk to the shaker.
Step 5.
- Add 0.5 oz of simple syrup for sweetness.
Step 6.
- Fill the shaker with ice and shake vigorously for about 15-20 seconds.
Step 7.
- Discard the ice water from your coupe glass and strain the mixture into the glass.
Step 8.
- Garnish with a light grating of nutmeg on top.
