A refreshing twist on the classic mimosa, using absinthe to add a complex, herbal flavor to the citrusy bubbly mix.

Instructions

- Chill a champagne flute by placing it in the freezer for a few minutes or filling it with ice water.
- In a mixing glass, combine 1 ounce of absinthe and 2 ounces of freshly squeezed orange juice.
- Stir gently to mix the ingredients well.
- Strain the mixture into the chilled champagne flute.
- Top off the glass with 3 ounces of chilled sparkling wine or champagne.
- Garnish with a twist of orange peel.
