Instructions
- Muddle the mint leaves and lime wedges in the bottom of a highball glass to release the mint oils and lime juice.
- Add sugar and a splash of soda water, stirring until the sugar dissolves.
- Fill the glass with ice cubes.
- Pour absinthe over the ice.
- Top with soda water to taste and stir gently to combine.
- Garnish with a mint sprig and a lime wedge.
