Instructions
- Chill a coupe glass by placing it in the freezer or filling it with ice water.
- In a cocktail shaker, combine 2 ounces of absinthe, 1 ounce of fresh peach puree, 1 ounce of lemon juice, and 0.5 ounces of simple syrup.
- Fill the shaker with ice and shake vigorously for about 15 seconds until well chilled.
- Strain the mixture into the chilled coupe glass.
- Garnish with a slice of peach and a sprig of mint.
