A unique twist on the classic Penicillin cocktail, infused with the aromatic notes of absinthe.

Instructions

- Chill a coupe glass by filling it with ice water.
- In a shaker, combine 2 oz of blended Scotch whisky, 3/4 oz of fresh lemon juice, 1/2 oz of honey syrup (1:1 honey and water), and 1/4 oz of absinthe.
- Fill the shaker with ice and shake vigorously for about 15 seconds.
- Empty the ice water from the chilled coupe glass.
- Strain the mixture into the chilled coupe glass.
- Garnish with a twist of lemon peel, expressing the oils over the drink before placing it on top.

3 oz Fresh lemon juice
0.5 oz Honey syrup
0.25 oz Absinthe
1 Lemon twist
