A refined twist on the classic sour cocktail using Armagnac, this drink features a smooth, frothy texture from the egg white, balanced with fresh citrus notes.
Instructions
- In a cocktail shaker, combine Armagnac, lemon juice, simple syrup, and egg white.
- Dry shake (without ice) for about 15 seconds to emulsify the egg white.
- Add ice to the shaker and shake again vigorously for about 15 seconds until well chilled.
- Strain the mixture into a chilled coupe glass.
- Gently add a few drops of Angostura bitters on top of the foam for garnish.
